4 Slices Rustic Sourdough Bread
1 Apple, cored, thinly sliced
2 tbsp Apricot jam
2 tbsp mayonnaise
6-8 oz alouette Double Crème Brie, cut into slices
1 tbsp fresh thyme leaves, optional


Instructions

  1. Spread 1 tbsp of jam over each bread slice.
  2. On one slice of bread, place alouette Double Crème Brie in an even layer over jam and top with apple slices.
  3. Optional: sprinkle with fresh thyme leaves.
  4. Cover with the other bread slice, jam side against the apples and spread half the mayonnaise over top.
  5. In a heated nonstick or cast-iron pan over medium-low heat, place sandwich, mayonnaise side down and cook until golden, about 2 minutes.
  6. Spread remaining mayonnaise over sandwich, flip and cook until golden and cheese is melted, about 2 minutes.
  7. Remove from heat, cut in half and serve.
